For now, to provide a sense of the sorts of datasets Unidata provides on the server side, you can start with the output of the Global Forecast System 2.5 degress resolution model from the US National Centers for Envrionmental prediction:

There are many other options, but this is a good one for illustration purposes. You'll note the WMS and WCS interfaces for computer access, but the netcdf subset service is the best one to gain a human understanding of what's available:
